Traditional Cappadocian Cooking

The huge tandır oven outside Kilim Cave Restaurant is not decorative – it is where our pottery dishes are slowly cooked. Unlike the small clay pots commonly used to serve pottery kebab in tourist restaurants, this is a traditional Cappadocian tandır: a deep, wood-fired oven used for centuries to bake bread and slow-cook rich stews.
